No Rice and Peas Jamaican Sunday Recipe

Today's dishes:

  1. Mac and Cheese

  2. Steam Veg

  3. Baked Chicken


#1. Two Cheese Mac & Cheese

Boil one box of Macaroni and Cheese. Grate extra cheese (white cheddar) on top of stove stop finish, as gooey as you want it! Then sprinkle with breadcrumbs. You can make your own or use the supermarket version. Then, I preheat the oven at 350 degree. Put it in for 20 minutes or until top is crispy to your liking.


Special Tip: Wait until it is cool before cutting so you can get perfect slices. Cutting while hot may cause shape to fall apart.


#2. Steam Vegetables

Wash and Chop desired vegetables for steaming. Put amount 3 cups of water to boil, add a pinch of salt and 1/2 tablespoon of butter. When pot is boiling put veggies in, for 5-6 minutes to preserve crispness, then remove and pour the veggies out of the water

Special Tip: Do not leave it in the water so that it does not lose crispness, but put in an enclosed container so that it remains warm.


#3 Baked Chicken

After cleaning up and seasoning your chicken, prepare your oven at 350 degrees. Line your baking sheet with foil paper then spread a thin layer of butter for moisture. After placing chicken on baking sheet, cover with foil paper (that’s the key to an inside tender chicken). Place in oven and bake for 30 minutes. Remove and turn the chicken over. Do not re-cover with foil, but rather leave it open to start browning after 15 minutes.

Feel free to add your favorite store-bought or home-made sauce and place again in oven for 10 minutes or until you are satisfied with the color. Your chicken is done when you have tested it with a fork and it is to your satisfaction, and the liquid is clear..
